Here are some tips for baking in the hot weather. I have been baking a lot recently in the heat so this is what I do in the hot weather
TIPS FOR BAKING IN THE HOT WEATHER
Bake as early as you can in the morning before it gets too hot or bake late into the evening
Be strict on your timings when cooking. Only open the oven when you have to, by doing this the kitchen should stay cool.
Keep doors and windows closed and close the blinds or curtains to keep the heat out
Plan when making cakes, and be organized. Make your buttercream and ganache the day before so you are not running around when it’s too hot. If you have to make decorations or cake toppers try and have them made a few days in advance if possible
If you have a fan on in the kitchen put a bottle of frozen water in front of it to help keep the temperature down
Make sure your cakes are dowelled properly and if you are not sure, use more dowels. It is better to be safe than sorry. Even if your cake is 5 layers and 1 tier, don’t take any chances and dowel it

When making buttercream use 1/2 icing sugar to 1/2 royal icing sugar. This will make the buttercream firmer thus making it set firmer on your cakes
Use ganache to crumb coat and cover the cake instead of buttercream before covering it with fondant. The ganache will set harder and give a firmer base than buttercream in hot weather
Plan, if you are making a tiered cake as the fondant needs time to set, ideally it should be left to dry for 24 hours before stacking it or even longer
When the fondant cake is completed don’t store it in the fridge as it will sweat, put it in the coolest room you have
When the drip is added to the chocolate drip cake, leave it for a few hours to set before adding the decoration or even overnight. I find the longer the better. Leave the chocolate drip cake out of the fridge in the coolest place to firm up. Personally, this works better for me doing it this way
If you have to deliver cakes then cool the car before delivering and keep the air conditioning on
Customers
Give your customers a storage guide to take with them or stick it to the box and don’t forget to add how to transport a cake as well
