National Cookie Cutter Day

I love making cookies, do you??? All sorts of cookies chocolate chip, plain, fruit cookies. My favourite is white chocolate and raspberry yum. That one is so tasty. which one is your favourite?

Cookies come in all shapes and sizes and the good thing is you can add sweets, chocolate chips, sultanas, raspberries, sprinkles and other things to them. You can also half-dip them in chocolate and add sprinkles for decoration, they look great

bespoke biscuits

I find the best things which go well for me are the decorate-your-own cookie sets I make. I make them all year around Easter, birthdays, Halloween, and Christmas.  I make shortbread cookies and ice them. I pack them with edible pens, sprinkles, icing sugar, and a piping bag.  You can add a drop of water to the icing sugar to get glace icing to drizzle over the cookies with the sprinkles. They are great to keep the kids amused or are great for gifts. I have even made sets for adults and can imagine them colouring them in, so cute.

Shortbread biscuit recipe

115g butter

175g plain flour

pinch of salt

55 g castor sugar

Method

Preheat the oven to 150 degrees C/300 degrees F/gas mark 2

Mix together the flour, salt and castor sugar. Rub in the butter until it resembles a soft dough. Do not overwork it as it will become tough. Leave for 10 minutes

Roll out the dough on a lightly floured surface and cut out shapes using pastry cutters. Put onto a baking tray covered with greaseproof paper

Bake in the oven for 15-20 mins until just coloured

Sprinkle with castor sugar

P.S this recipe is so versatile you can then cover the biscuits in chocolate or fondant or royal icing and decorate as desired.
