Popular types of cupcakes in the UK
So cupcakes are still in favor and trending in the UK. With the cost of living and inflation expensive, cupcakes are somewhat cheaper than having a larger cake. Of course, it is nice to indulge occasionally. Bento cakes are very popular right now with a 4 or 5-inch 2-layer cake and either 5 or 8 cupcakes to match. They can be tailored for all occasions and made in any colour and flavour. They look so pretty don’t you think?
Cupcakes with sprinkles are the easiest to make and they cost less. You can buy a box of 6 or 12 with sprinkles on cheaper than the bespoke decorated ones as they take less time to make and decorate.
Bespoke cupcakes can be made in any flavour, decorated to the customer’s taste and cost more to purchase. You could choose 2 or 3 flavours in a box which would be hand-decorated. Most people would go for chocolate cupcakes with chocolate buttercream and vanilla flavour sponge and buttercream for a children’s party. Whereas for an adult’s birthday, they might be more adventurous and go for raspberry and white chocolate or caramel and chocolate or even Biscoff or Nutella flavour which is quite popular.
Vanilla Cupcake Recipe
Cupcakes
110g Margarine
110g Golden castor sugar
2 large eggs
½ tsp vanilla extract
110g self-raising flour
Buttercream
150g softened butter
300g icing sugar sieved
1 tsp vanilla extract
3 tbsp hot water
Method for cupcakes
Heat oven to 180c/160c fan or gas mark 4 and fill a 12-cupcake tray with cases
Beat110g margarine and 11g golden castor sugar until pale and fluffy then whisk in 2 beaten eggs one at a time making sure you scrape down the sides of the bowl after each time
Add ½ tsp of vanilla extract then fold in 110g of self-raising flour to the mixture.
Divide the mixture between 12 cupcake cases.
Bake for 15 minutes until golden brown and insert a skewer into the middle of each cupcake, making sure it comes out clean. Leave to cool on a cooling rack.
Method for buttercream
Whisk the butter until soft and fluffy, add the sieved 300g of icing sugar a little at a time then add 1 tsp of vanilla extract. If the buttercream is too hard add 2-3 tbsp of hot water and stir. If you want to colour the buttercream add a few drops of the colour and stir.
Put a star piping tube into a piping bag and add the buttercream. Pipe over the cupcakes.
